Today I am going to share with you all a distinctive recipe that is ENNAI KATHIRIKAI KULAMBU (BRINJAL CURRY). This curry is one of the finest ones in our Indian food, especially in Chettinad. This ENNAI KATHIRIKAI KULAMBU(BRINJAL CURRY)  is famous in south Indian, north Indian cuisines, and both cuisines use the same ingredients and cooking procedure. Here we are using BRINJAL as the main ingredient which has many benefits as high in antioxidants, helps to reduce the risk of heart disease, and also promotes weight loss. I am challenging you all for sure that you will love this ENNAI KATHIRIKAI KULAMBU(BRINJAL CURRY).

PREPARATION TIME

COOKING TIME

20-25 MINUTES

 

INGREDIENTS:

Brinjal - 5 nos (big size).

Onion - 2 (medium size).

Tomato - 2(medium size).

Green chili - 4 nos.

Garlic - one whole which has 7-8 cloves.

Tamarind - one medium lemon size.

Coconut paste - 3 tablespoons.

Turmeric powder - 1 teaspoon.

Kulambu Chili powder(home-made mixer of more spices) - 3 tablespoons. if you don’t have this powder you can use 1 tablespoon coriander powder,1 tablespoon cumin powder,2 tablespoon chili powder.

Salt - required.

Water.

FOR TEMPERING:

Oil (sesame oil) - 4 tablespoons.

Mustard seeds - 1 teaspoon.

Fenugreek seeds - 1 teaspoon.

Curry leaves - few.

Asafoetida - 2 pinches.

PREPARATION METHOD:

STEP 1: Take a pan or Kadai, made it to heat, add 2 tablespoons of oil and add the slice cut brinjal (if you have a small size of brinjal no need to cut into pieces instead divide that into four partitions, here I am having the big size brinjal so I am cutting into slices).






STEP 2: Now saute the brinjal(kathirikai) in oil, close the lid and leave it for 3 -4 minutes.after that transfer into another bowl.


STEP 3: In that same pan add 2 tablespoons of oil and add mustard and another tempering which is mentioned above.



STEP 4: Next add the green chili, chopped garlic, and chopped onions.



STEP 5: When the onion becomes translucent add the chopped tomatoes and the required salt.



STEP 6: At the time when tomato gets cooked add the pan fry brinjal.



STEP 7: Next to that add turmeric powder and kulambu chili powder.if you don’t have this powder you can opt for coriander, chili, cumin powder given by the above measurement.


STEP 8: Saute the above mixture until the raw smell goes.

STEP 9: Next add the tamarind which is soaked in water.



Step 10: Add the required water for a curry consistency and made it boil for 5 minutes.



STEP 11: Then add the coconut paste and leave the curry to boil for 10 minutes by closing the lid.



Then, when you open the lid you can see the ENNAI KATHIRIKAI KULAMBU(BRINJAL CURRY) which has floating oil in its upper layer and it would be surely a MOUTH WATERING RECIPE.



Now the ENNAI KATHIRIKAI CURRY(BRINJAL CURRY) is ready to serve.

This would go well with hot boiled rice, idly, dosa, chapati, Nan, roti.
